No Bake Chocolate Oatmeal Cookies

2 3/4 cup QUICK Oats
1/2 Peanut Butter of your choice
1 stick butter
2 cups sugar
1/2 cup chocolate chips or cocoa powder
1 tsp vanilla
1/2 cup milk

Over medium high heat Add butter, sugar, milk and chocolate chips
Stir continuously until mixture is smooth and creamy
Once mixture starts to boil continue to stir and boil for one minute. Remove from heat. Add oats, peanut butter and vanilla. Stir vigorously until combined.

Scoop out by spoonfuls onto a parchment lined baking sheet

Cookies will set quickly so work expeditiously.
