I love Betty Crocker Recipes, and I have three new (to me!) ones for you this week! These 1970s Bisquick recipes were fun to try.

PEPPERONI SQUARES (pg 51)
2c Bisquick baking mix
2 hard cooked eggs, chopped
1/2c chopped pepperoni
2Tbsp instant minced onion OR 1/2c chopped onion
1tsp oregano leaves
1/4tsp pepper
2/3c milk
soft butter or margarine

1. Mix all ingredients except butter
2. Spread dough in greased square pan, 9x9x2 inches, brush with butter
3. Bake 15 to 20 minutes. Cut into squares. Serve warm.

TURKEY POT PIE (pg 7)
Turkey Filling (below)
2c Bisquick baking mix
2Tbsp shortening
1/3c milk

Heat oven to 450
1. Prepare Turkey Filling. Pour into ungreased baking dish, 11 1/2 x 7 1/2 x 1 1/2 inches. Keep hot in oven while preparing topping.
2. Stir remaining ingredients to a soft dough. Gently smooth dough into ball on floured board. Knead 5 times.
3. Pat or roll dough into rectangle, 11 x 7 inches. Cut 2 or 3 slits in center and place over hot filling.
4. Bake about 15 minutes.

Turkey Filling
1/4c chopped onion
1/4c butter or margarine
1/3c Bisquick baking mix
1tsp salt
1/2tsp pepper
2c chicken broth
2/3c light cream
3 to 4 cups cut up cooked turkey
1Tbsp chopped pimiento
1tsp Worcestershire sauce

Cook and stir onion in butter in large saucepan until tender. Blend in baking mix, salt, and pepper. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Stir in remaining ingredients. Heat to boiling, stirring constantly. Boil and stir 1 minute.

PEACHIE PUDDING BAKE (pg 25)
8 medium peaches
3/4c brown sugar (packed) or granulated sugar
1c Bisquick baking mix
1/4tsp nutmeg

Heat oven to 425.
1. Peel peaches and slice into large bowl. Sprinkle evenly with sugar and let stand 10 minutes. Stir in baking mix and nutmeg.
2. Turn fruit mixture into greased square pan, 9 x 9 x 2 inches.
3. Bake 30 to 35 minutes. Serve warm and with light cream or ice cream.
