I get this question all the time but these 2 rules should help out when trying to determine the optimal time for picking red leaf Japanese maple seeds for germination. Fall is the time you want to harvest the seeds from the trees. Wait until you see the leaves starting to fall from the trees and the temperature dips below freezing at least once. This way you'll know the Japanese red leaf maple is going dormant and there isn't any more seed ripening happening on the tree. Once you pick them, just put them in a plastic Ziplock bag in the fridge and cold stratify for the winter. Once spring comes along and there won't be any more freezing nights, you can bring them out and plant in a container or directly in the ground.
