Quick Christmas Candy

Almond Crackers

2 sleeves of graham crackers or enough to line the bottom of a large baking sheet
2 cups of slivered almonds lightly toasted
1 ½ cups of butter cubed
1 cup of brown sugar

Spread the almonds on a cookie sheet and place in a 400degree oven, watching them carefully to make sure they don’t get to dark. Once you have them toasted and set aside to cook put the cubed butter in a pot to melt. Line the bottom of a large cookie sheet with tin foil and then the graham cracker crumbs making sure to cover the bottom completely. Once the butter melted stir in the brown sugar and heat until the boiling point. Once the mixture boils remove it from the heat. Spread the almonds on the graham crackers and then pour the butter and sugar mixture over the top making sure to cover all of the crackers. Bake in a 400degree oven for 68 minutes or until its really bubbly. Remove from the oven and let cool about 5 minutes or until it begins to set up. Using the foil lift the mixture from the pan and put on a cutting board. Cut into square or just break it apart. You want to get it off the foil before it cools completely or its really hard to get off.

White Chocolate Chip Oreo Fudge

2 bags of white chocolate chips
¾ of a can of sweetened condensed milk
10 chocolate oreo style cookies chopped into small chunks

Put the chips and the condensed milk into a heat proof bowl and give it a stir. Put the bowl into your microwave oven and set it for one minute and 20 seconds. Check it every 10 seconds giving it a stir each time. You don’t want it to scorch and you do want the chips to be completely melted. Once the chips have melted and everything is well combined stir in the cookie chunks without overmixing. Pour into a buttered 8” X 8” pan and refrigerate for two hours. Turn out and cut into squares.

Three Ingredient Chocolate Fudge

2 bags of milk chocolate chips
¾ of a can of sweetened condensed milk. A whole can if you like it softer.
1 tsp vanilla

Put the chips and the condensed milk into a heat proof bowl and give it a stir. Put the bowl into your microwave oven and set it for one minute and 20 seconds. Check it every 10 seconds giving it a stir each time. You don’t want it to scorch and you do want the chips to be completely melted. Once the chips have melted add the vanilla and stir until combined. Pour into a buttered 8” X 8” pan and refrigerate for two hours. Turn out and cut into squares.
