Best Foods:
1. Fish, Poultry, Pork, Lamb and Red Meat. You may eat as much Beef, Pork, Lamb, Wild Caught Fish and Poultry as you would like. If at all possible try to buy red meat that has been grass fed and organic.Keep the fish to the smaller size: shrimp, canned light tuna, salmon (canned and fresh/frozen), pollock, haddock, oysters, sardines, tilapia, whitefish and catfish.Do not eat Shark, Swordfish, King Mackerel, or Tilefish because they contain high levels of mercury? Eat "wild" and not "farmed" fish and especially eat cold water fish (wild salmon).
2. Stone Fruits & Berries. All fruits with a "stone" or pit. These include plums, cherries, peaches, nectarines and apricots. Apples and pears may be consumed in limited quantities.Most berries are ok to eat. (except those listed in the "do not eat" section of the guide).
3 Oils. Olive oil, coconut and avocado oil can be used liberally. Cook with olive oil at lowmedium heat, or use it cold.
4. Saturated Animal Fats, Pork lard and beef tallow can be used in any dish you prepare or you may also cook with either of these
5. Broth. Read the labels for hidden ingredients. (Make your own chicken broth.)
6. Beverages. Drink plenty of water, you may add seltzer if you prefer. You may also add fresh squeezed lemon or lime to the water.

Do Not Eat Food List:
All grains, especially wheat but including corn, oats, rice and many others.
All legumes, including beans, soy, and peanuts.
Legumes contain estrogen mimics, which can be harmful to health. Beans, especially soybeans but also fava beans and other beans, contain phytoestrogens these mimic estrogen and can interfere with hormone function. Phytoestrogens evolved in plants as a defense mechanism, a way to disrupt the reproductive success of predators.
There is evidence that some lectins bind weakly to our cells insulin receptors, setting cells to be "always on" for fat production and storage (keeps you fat!).
All plants in the nightshade family such as potato, tomatoes,/tomatillos, eggplant, goji/wolf berries, cape gooseberries (not normal gooseberries), ground cherries and garden huckleberries (not blueberries), peppers of all kinds including green, red, chili, paprika, cayenne (hot and sweet), Tabasco sauce, bell peppers (green, red, yellow, cherry), cayenne pepper (capsicum), pimento, chili peppers, hot peppers (long & red, red cluster), tobacco is also a nightshade as is jimson weed.

Lectins Lectins are problematic because they are sticky molecules that can bind to the linings of human tissue, especially intestinal cells. (Gluten from wheat is an example of a lectin.)In so doing, they disable cells in the GI tract, keeping them from repairing and rebuilding Therefore, lectins can contribute to eroding your intestinal barrier (leaky gut).Since we are attempting to heal your gut lining we want to minimize any inflammation that may hinder our goals.
