A DAY IN SARAH'S LIFE 🌻VAN LIFE UPDATE

Just a day in my life :) I share what I do with my kids, what I eat and where I go + a little van/minibus update! p.s. sorry for the messy and noisy apartment!

p.s I didn't include everything I ate I also ate some snacks like fruit and a handful of nuts. Plus I drank lots of mineral water and had vitamin b12 and microalgae oil at night.


Sambar Vegetable and dal stew:
〰Note I triple this recipe when I make it!
4ish cups water (slowly add the water also depends on the dal or peas you use)
12 tsp salt
1 1/4 cups green split peas, whole lentils, toor dal, mung bean dal (green slip peas is my favourite)
11/2 lb assorted vegetables such carrot, eggplant, tomatoes, beans, squash, courgette etc
1 tsp black mustard seeds
1 1/2 ground cumin
2 tsp ground coriander
1 tsp turmeric
4 tbsp grated coconut (i just blended some coconut flakes)
Tamarind was also part of this recipe but I didn't add it and was fine without it.

You can be a grain nerd like me and presoak your dal or greens peas in water beforehand. I like doing this :) If you do this don't add as much water in the first step.

Wash dal, then cook on the stove in salted boiling water. Remove any froth and dal skis that collect on the surface, then cover and cook on medium heat for 15 to 25 minutes. Dal should become soft but not mushy.

While cooking the dal, wash and cut veggies into small cubes.
Heat the mustard seeds in a small amount of coconut oil and fry. After they finish popping, add the powdered spices., fry for a few seconds, then add vegetables.

Stirfry for 10 minutes until all vegetables are cooked. Add grated coconut and fry for two more minutes.

By this time dal should be ready. Mix the vegetables into the dal. on a low heat, heat everything through and serve.

I served on a bed of mashed potato, but it's fine on its own. Add some healthy fats ontop like dal, coconut milk or hemp seeds.
