Serves 4 people

2 x cartons or cans of cannellini beans (or similar white bean).
2 tbsp Butter and splash of olive oil
2 onions finely sliced
2 garlic cloves finely chopped
300ml vegetable stock
1tsp Biona Vegan Worcestershire sauce
1tsp soy sauce
1 tsp dried or fresh thyme
2 bay leaves
70 g grated Comte or Gruyère (or whatever you have in the fridge if you are that way inclined)
A mini ciabatta sliced and toasted per person

Make it:

Preheat the oven to 200c

In a cast iron pan or similar ovenproof pan, caramelise the onions in the butter, and a touch of oil, on a medium heat for around 30 minutes.

Add the garlic, bay leaf and thyme.
10 mins

Add the Soy and Worcestershire sauce to the stock. You shouldn’t need salt as the Soy is doing the heavy lifting here.

Add the beans and stock to the pan.
Bubble away, reducing the stock down to a sauce…
10 mins, roughly.

Scatter over the cheese and put in the oven for 10 minutes.
I checked at 8 minutes and all was good. You should do so too. It will depend on how good your oven is.

Ladle the beans over your choice of toasted bread. I chose ciabatta and it was excellent.
