After methodically playing chapter 2 to discover when this horse spawns, this video takes a look at that which missions I've played and not played etc. But it also shows acquiring the horse at Moonstone Pond too via the same method, and it ends by comparing the Fox Trotter with 2 other high quality horses in Chapter 2.

The Missouri Fox Trotter can be bought in the stable beginning in Chapter 4, but the Silver Dapple Pinto Missouri Fox Trotter can only be bought in the Epilogues. This method of acquiring the horse early does definitely work. It requires a bit of patience, but it is relatively stress free and requires no special skills to make it work.
