Ingredients for one 9 x 5inch cake:
For the loaf pan:
Baking spray (or butter and flour) for greasing
For the cake batter:
3 large eggs
1 cup sugar
1 cup sour cream or Greek yogurt
1/2 cup neutraltasting vegetable oil
The grated zest of 1 lemon
2 tablespoons lemon extract
1 1/2 cups selfrising flour (see note below)
For glazing the cake:
1 cup confectioners' sugar
Fresh lemon juice enough for desired glaze consistency
Bake at 350°F for 5055 minutes.
NOTE: To make your own selfrising flour:
For each cup of allpurpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon table salt. Whisk to combine.
