Authentic Kerala Dishes with my personal Touch

Ingredients for Ada
Rice flour 1cup
Water 1cup
Sugar 1/2tsp
Ghee 1/2tsp

For Payasam
Homemade Ada
1st thick coconut Milk 11/2cup
Second Coconut Milk 3cup
Third Coconut Milk 4cup
Jaggery 400500gm
Salt On pinch
Dried ginger powder 1/4tsp
Cardamom Powder 1/4tsp
Cashenw uts 1015
Coconut Pieces
Ghee 11/2tbsp

Method


Take a bowl add 1 cup of idiyappam rice flour, ½ tsp of sugar , ½ tsp melted ghee. Mix well with normal temperature water. Pour water in parts. The consistency is like thick coconut milk. Mix he batter well before you pour it into the plate, each and every time.Take a steel plate and grease it, pour one ladle of the batter. Then spread the bater to the end of the plate. Steam the ada. When it cools down make markings to your desiredshape of the Ada. Remove the pieces into water bowl. Make the ada the previous day.

For Pradhaman

Take a big thick bottomed saucepan and add jaggery syrup. Bring the flame to low. Remove the ada from the water and strain it well. Then add it to the jaggery syrup.let the syrup thickens add 4 glass of 3rd coconut milk. Mix well. Let it dry and thicken well. Add 3 cup of 2nd coconut milk. Let it thicken. Stir occasionally. Add a pinch of salt. Stir well. Check the sweetness. Adjust the jaggery according to your taste. Add the 1st coconut milk. Only heat the first coconut milk. Turn off heat immediately. Add a pinch of dry ginger powder, cardamom powder and cumin powder(optional). Mix well. Check the payasam.

Take a small saucepan melt some ghee, fry coconut chunks and some cashews. Add it to the payasam. Close it for few mins.
