Recipe:
For the mince
230g (1/2 pound) Pork neck
230g (1/2 pound Pork belly
1g (1/2 teaspoon) Nutmeg
2g (1 teaspoon) Garlic powder
1g (1/2 teaspoon) Pepper
6g (1 teaspoon) Salt
3g (1/2 teaspoon) MSG (optional)
Mix and mince through the fine plate attachment.
For the sauce
4 minute boiled egg
15 g (1 tablespoon) Dijon mustard
6g (3 Tablespoons) Fresh sage
1 caramelized apple
15 g (1 tablespoon) apple cider vinegar
6g (1 teaspoon) Salt
1g (1/2 teaspoon) Pepper
200g oil
Blend all put the oil, then add the oil slowly to emulsify.
