Aloo Paratha
Ingredients
1. Wheat powder – 2 cups
2. Potato – ½ kg
3. Salt – to taste
4. Chopped big onion / shallots – 1 cup
5. Chopped green chilli – 5 to 8
6. Chopped ginger & garlic – 1” piece & 5 to 6 cloves
7. Ajwain (opt) – ¼ tsp
8. Turmeric powder – ¼ tsp
9. Chilli powder – ¼ tsp
10. Asafoetida powder ¼ tsp
11. Ghee & oil – ¼ tsp
12. Coriander leaves – ¼ cup
13. Cumin seeds – ½ tsp

Preparation
1. Prepare chapati dough with wheat powder salt & water. Set aside.
2. Pressure cook potato till done, cool, peel & crush well. Set aside.
3. Heat the oil, season with cumin, ajwain, sauté big onion, ginger, garlic & green chilli.
4. Add the crushed potato adding salt, chilli powder, turmeric powder, asafoetida powder, coriander leaves & keep sautéing on slow fire till the moisture escapes; when cool make balls & set aside.
5. Roll the dough into equal number of balls. Take out one ball spread into a chapati, place one potato ball inside & cover with the chapati & roll out again.
6. Cook on the hot tawa. Cooking both sides, applying ghee. Serve hot.
