Ambrosia Cake
1 box yellow cake mix
2 eggs
1/2 c water
1/2 c oil
1 large can mandarin oranges, drained
optional..1 small can crushed pineapple, drained
Mix all ingredients and place in greased and floured 12 X 9 inch baking pan at 350 degrees for 3035 minutes.
Frosting 13.4 oz box instant Vanilla pudding mix
1 8 oz Cool Whip, thawed
Mix together and frost on cooled cake. Chopped pecans or walnuts can be added to frosting.
This is a light and refreshing cake...easy and delicious !!
If you want a fluffier frosting, add 11/2 c milk to dry pudding mix and mix for a couple minutes, then add Cool Whip and frost !! Will be using on the Pistachio Cake that I will be making soon.
