Baigana Pakudi Recipe ( Odia ) | Baingan Pakoda Recipe by Mrunalinee : Pakoda / Fritters is a deep fried Snack . Here I have prepared this Fritter ( pakudi / pakoda ) using big size purple Brinjal which looks beautiful and tasty as well . Baingan pakoda is also called as " Baigeni " in Odia , Odisha . Round shape thin brinjals coated with gram flour , rice flour slurry then deep fried until become crispy and golden brown . Carom seeds and crushed ginger enhances the aroma and flavour in this Pakoda . So must try this crispy and flavourful Baingan pakoda / Fritters . Do serve it immediately after taking out from Oil with Tomato Ketchup as a Snack or serve it hot in Lunch meal as a side Dish . Enjoy :)
Ingredients :
1. Big Size Purple Brinjal ( Baigana ) 2 nos.
2. Gram Flour ( Besana ) 1 cup
3. Rice Flour ( Arua Chaula Gunda ) 1/2 cup ( instead of it use 2 pinch cooking Soda ) ** Recommended to use Rice flour / Rice powder **
4. Crushed ( Ginger 2 inch + 2 green Chilli ) 1 tbsp ** must add it **
5. Fresh Chopped Coriander leaves 1 tbsp
6. Carom Seeds ( Ajwain / Juani ) 1 tsp
7. Turmeric Powder 1 tbsp
8. Red Chilli Flakes 1 tbsp ( Optional ) ** Do not add Kashmiri Red Chilli powder in it ** use plain spicy red chilli powder if needed
9. Salt to taste
10. Oil to fry .
