Today I am doing a quick baking science lesson about the difference between baking soda and baking powder.
Baking soda and baking powder are both chemical leavening used to help make your baked goods rise. Baking soda is an alkaline substance and needs an acidic ingredient to interact with. It is used in baked goods that include an acidic ingredient. Baking powder is baking soda premixed with an acidic ingredient. Therefore, it can be used in recipes that don't include an acidic ingredient in them.
