Banana Cake with Banana Frosting and Chocolate Drizzle

Banana Cake

Ingredients:
1 ½ cups oat flour
½ cup almond flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
3 ripe, leopardspotted bananas
½ cup maple syrup
1 tablespoon vanilla
1 tablespoon apple cider vinegar
 
Instructions:
In a mixing bowl, combine the flours, baking powder, baking soda and spices. In a separate bowl mix the bananas, maple syrup, vanilla and vinegar. Stir and smoosh until well combined. Pour the liquid ingredients into the dry ingredient and stir well. Add to a parchment paper lined pan (9x9 inch works well). Bake at 400 for 30minutes or until the center of the cake is baked and not liquidy.
Cool and frost with Banana Frosting and Chocolate Drizzle, below.

Banana Frosting with Chocolate Drizzle
 
Ingredients:
1 block SILKEN firm tofu, well pressed or wrapped in kitchen clothes overnight.
1 ripe, leopardspotted banana
1/3 cup maple syrup
1 teaspoon vanilla
¼ cup Enjoy Life chocolate chips

Instructions:
To a foodprocessor or high speed blender, add the tofu, banana, maple syrup and vanilla. Blend until smooth with no visible chunks.
Frost cake with Banana Frosting then add chocolate drizzle, if desired
In a small microwavesafe bowl, add chocolate chip and 1 teaspoon water. Microwave until the chips look melty – stir and stir until the melted chocolate is shiny and  smooth. Use a spoon to drizzle lines of chocolate over the Banana Frosting.
