Banana jam is a great way to use all those extra bananas!
Banana Jam
2 cups mashed bananas
2 cups sugar
2 Tablespoons lemon juice
Sterilize jars
Bring bananas and lemon juice to a boil
Add sugar and return to a boil
Bring jam to 220 F
Hot pack jars
1/4 inch head space for metal flats
1/2 inch headspace for reusable lids
Water bath in pint or smaller jars for 10 minutes
Let cool for 5 minutes, then remove
