This is the first episode in the ‘Coffee and Banana’ series where I push the boundaries of ingredients and their byproducts to make delicious drinks, reducing or eliminating waste.
First we make Banana Peel Saccharum from leftover banana peels, followed by a Zero Waste Coffee Cocktail inspired by one of my favourite desserts in the world, called Pucks and Peels (made from leftover coffee / espresso pucks and banana peels)!
