BARBADOS LEAD PIPES

This is a recipe for an ultimate Bajan Lead Pipes. These sweet treats made almost like a coconut sweetbread got it's name because of it's long shape and hard texture when one bites into it. It is one of Barbados favorites and you will find them in every household.

Recipe calls for
4 cups of flour
1 teaspoon ground cinnamon
1/2 tsp grated nutmeg
1 stick unsalted butter
1 cup brown sugar
1 1/2 cups grated coconut
2 teaspoons mixed essence
1/2 cup water
Preheat oven to 350 degrees
Add 3 1/2 cups flour along with the cinnamon and nutmeg to a large bowl and mix will.
cut the butter into cubes and rub it into the flour.
Add the sugar and coconut to the flour mixture and knead well to mix.
pour in the essence and water and bring the mixture together to form a dough, it will be a little pasty.
Gradually add in the remaining flour and knead in the bowl for 10 minutes
Transfer the dough to a floured work surface, flour a rolling pin and roll the dough into a 10x10 square.
Using a sharp knife, cut the dough in half, this should give you about 10 Lead Pipes.
place on baking sheet, you can place them close together. score the dough by making crisscross cuts.
Brush with sugar water and bake for 20 mins, at the end of the 20 mins remove the pan for oven brush again with sugar water or dust with sugar and return pan to oven and bake for another 20 25 minutes or until done
Remove from oven, rest in pan for 5 minutes and then transfer to wire rack to cool completely
Serve and enjoy.
