I fire up my Oklahoma Joe's Highland smoker and cook bone in country style ribs. I use mesquite wood through out the cook and maintain pit temperature at around 275f. When the country style ribs reach internal temperature of 170f, I place the country style ribs in an aluminum pan and mix beer and barbeque sauce. The pan is placed into the smoker for 1 hour. After that hour I remove the country style ribs from the beer braise and place back into the pit to sauce them for 15 minutes. Then it was time to eat! 252022
