Our recipe
5 lbs fatty pork should cut in 1.5 inch steaks
1 cup dark brown sugar
1/4 cup oyster sauce
1/4 cup hoisin sauce
2 tbsp soy sauce
2 tsp Chinese five spice powder
1 tsp sesame oil
1/2 tsp chicken stock granules or msg
1 tbsp Chinese cooking wine (we left it out)
1 tsp red food colouring (optional but it’s not the same visually without it)
Reserve 1/4 cup of marinade for glaze and mix with 1 tbsp of honey or maltose
Marinate pork overnight in a ziplock bag or a sealed container
Cook or airfry pork for an hour hour and a half at 300F in a casserole dish covered with foil
After pork is done cooking, transfer pork to a baking dish and glaze each side
Cook or airfry at 400F for 1015 minutes or until outside is nicely charred but not burnt
