A great recipe for zucchini stuffed with minced beef. It's a great way to incorporate lots of veggies into a comfort food dish!

Ingredients for (4 persons):
For the minced meat stuffing:
4 zucchini
1/2 kilo of ground beef
2 small / 1 large onion
4 garlic cloves, minced
1 tsp dry basil
2 tsp ground cumin
10 cherry tomatoes, chopped
2 eggs
3 tbsp of breadcrumbs
200 gr. grated yellow cheddar cheddarost
150 gr. Grated parmesan
salt pepper

For the tomato sauce:
1 can of crushed tomatoes
12 tbsp of balsamic vinegar
2 garlic cloves, minced
salt pepper

Bake for 40 minutes at 200 deg. C / 390 deg. F
