Brazilian feast of roasted whole pig ribs shank shoulder and pork loin on skewers and in the oven

More than 700 kilos of pork, 400 of which were whole pieces roasted in a manual rotating system over the fire, as well as pork cuts such as shank, loin, overpalette and shoulder in the oven and on the spit. This was the menu, in addition to the side dishes, that delighted hundreds of people who participated in the 22nd edition of the Pig Festival, in Linha Imperial, Nova Petrópolis, southern Brazil.
With a population that includes descendants of German immigrants, the peaceful community comes together every year for the festival, which receives visitors from other locations.
The residents involved in the event started working on Friday, preparing the meats which, after seasoning, were marinated for 36 hours, until Sunday, when they were placed on the fire.
Excellent quality meat, seasoning refined over years of experience, dedicated roasters and cooks, make this party an explosion of flavors. With a touch typical of German descendants.
