Callos Recipe Panalo, big dish that is rarely served on the table, usually served only on very special occasions as it takes 4hours minimum to cook for a really yummier Callos. Truly worth the wait & the effort as it is really delicious. We love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Callos Recipe Panalo!
Ingredients:
1. Parboil
Enough water to submerge ingredients
850 grams pork trotter
850 grams beef tripe
5 pcs bay leaves
1/2 cup vinegar
2 Pressure Cooker
***parboiled beef tripe
***parboiled pork trotter
250 grams leek (1 stalk)
2 pcs bay leaves
2 tsp ground pepper
10 cups water
3. Saute/ Simmer
3 tbsp olive oil
2 cups red chilis
200 grams smoked bacon
1/3 cup garlic
2 tbsp spicy chilis
1 cup shallots/ onions
2 pcs Chinese sausage best if Chorizo de bilbao
400 grams tomato sauce
1 tbsp spicy chili powder
***beef tripe
***pork trotter
***tripe & trotter broth
1 cup carrots
113 grams chickpeas/ garbanzos
***fried chilis (save some for garnish)
1 pcs beef cube
2 tbsp liquid seasoning or Patis
garnish with: fried red chilis + spring onions + spicy chilis
Cooking time: not less than 4 hours
