Pork Tenderloin In A Jar Directions:
To start, you need the following ingredients:
1 quart pork or chicken broth [I used ham bouillon]
2 Tbsp garlic powder
2 tsp salt
1 tsp ground black pepper
2 tsp dried oregano
1 Tbsp onion powder
2 Tbsp cooking oil
5 lbs. pork tenderloin, 1inch slices
First, trim any excess fat off of the pork tenderloin and cut it into 1inch thick slices. Heat oil in a frying pan and sear both sides of the tenderloin slices [about 23 minutes per side]. While your meat is cooking, heat broth and spices in a saucepan. Place the meat slices in pint jars and fill with the heated broth. Next debubble, place lid and ring on jar and finger tighten ring. Leave a 1inch head space. Pressure can for 75 minutes.
You can store the canned pork in a cool, dry place for up to one year. When you're ready to enjoy it, simply open a jar, heat the pork in a saucepan or microwave, and serve. You can thicken the jar’s liquid with cornstarch, flour or arrowroot to make a gravy.
