Ingredients:
2 lb gr beef
4 oz beef liver chopped
2 eggs
2 tbsp worcestershire: All Natural Worcestershire sauce: https://amzn.to/3QDPI8M
2 tbsp dried onions (moistened with 2 tbsp water)
1 tsp Redmonds salt
1 cup pork panko crumbs: https://amzn.to/3QFhge8
Combine all ingredients into large bowl.
Gastrique:
1 cup red wine vinegar
2 tbsp honey or allulose
1/2 tsp ground cloves
Combine the gastrique ingredients in pot and reduce by about 1/3 volume. Add about 1/4 c to 1/3 cup of that mixture to the beef mixture and work in.
