Cauliflower masala
Ingredients
1. Cauliflower medium size florets – 4cups
2. Big onion chopped – 1cup
3. Ginger – 1”
4. Garlic – 5 to 6 cloves
5. Kashmiri chilli powder – 1 tsp
6. Salt – to taste
7. Nuts – 8 to 10
8. Tomato chopped – 2
9. Cinnamon – ½ “
10. Cloves – 1
11. Cardamom – 1
12. Turmeric powder – a big pinch
13. Cumin seeds – ½ tsp
14. Oil – ¼ cup (total)
15. Curd – 2 tbsp
16. Coriander leaves – ½ cup


Preparation
1. Sauté the cauliflower sprinkled with salt in hot oil and set aside.
2. Heat oil, add items 9,10,11,and sauté adding items 2,3,4 and 7. when translucent add tomato stir 3 to 4 mts adding chilli powder or chilli ,salt again sauté till oil separates well
3. Grind well the sautéed tomato onion mix with a little turmeric powder adding water if needed.
4. Heat oil, add cumin crackle, add the ground masala stir till colour changes and oil separates, add the cauliflower and water, boil till done.
5. Garnish with fresh beaten curd and coriander leaves.
