CHAPLI KABAB
Preparation time 1015 minutes
Cooking time 2025 minutes
Serve 24

Ingredients
For Kebab
800 gms Mutton mince, मटन खीमा
1 tsp Salt to taste, नमक स्वादअनुसार
1 tbsp tender Coriander stems, finely chopped, धनिए के डंठल
3 medium size Onions, grated, प्याज
Salt to taste, नमक स्वादअनुसार
1 medium size Tomato, chopped, टमाटर
2 Green chillies, chopped (less spicy) हरी मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
½ Half Egg, अंडे
Prepared Chapli Kebab Masala, तैयार किया हुआ चपली कबाब मसाला
1 tsp Chilli flakes, चिल्ली फ्लेक्स
1 tsp Dry Pomegranate seeds, सूखा अनार के दानें
¼ tsp Carom seeds, अजवाइन
1 ½ tbsp roasted Gram flour, भुने चने का बेसन
2 hardboiled Eggs, grated, अंडे
½ inch Ginger, peeled, grated, अदरक
1 tbsp fresh Pomegranate pearls (optional) अनार के दाने
Salt to taste, नमक स्वादअनुसार

For Chapli Kebab Masala
1 tbsp Coriander seeds, धनिया की बीज
1 tsp Cumin seeds, जीरा
1520 Black peppercorns, काली मिर्च के दाने
2 Black cardamom seeds, बड़ी इलायची के दाने
Salt to taste, नमक स्वादअनुसार

For Frying
Oil, for shallow fry, तेल
1 Tomato, slice, टमाटर
24 Green chillies, slit, हरी मिर्च
Salt to taste, नमक स्वादअनुसार

Other Ingredients
1 Burger bun, बर्गर बन
½ tbsp Butter, cube, मक्खन
Mint chutney, पुदीने की चटनी
Tomato, slice, टमाटर
Onion, rings, प्याज
Mint leaves, पुदीना पत्ता
Fried Green chilli, हरी मिर्च
Prepared Chapli Kebab, तैयार किया हुआ चपली कबाब
hardboiled Eggs, slice, अंडे
Mint chutney, पुदीने की चटनी

For Garnish
Onion, rings, प्याज
fresh Pomegranate pearls, अनार के दाने
Mint leaves, पुदीना पत्ता
Mint chutney, पुदीने की चटनी

Process
For Kebab
In a parat, add mutton minced, salt to taste and mix well.
In a bowl, add grated onion,salt to taste and mix it well, squeeze the onion and remove the excess water and transfer it into a prepared mixture and mix well.
Add tomato, green chillies, coriander leaves, half beaten egg.
Add prepared chapli kebab masala, chilli flakes, dry pomegranate seeds, carom seeds and mix everything well.
Add roasted gram flour, grated boiled eggs, ginger, fresh pomegranate pearls, salt to taste and mix everything well.

For Chapli Kebab Masala
Heat a pan on moderate heat, add coriander seeds, cumin seeds, black peppercorns, black cardamom seeds, salt to taste and roast them until fragrant.
Switch off the flame, once it cools down transfer it into a grinder jar and grind it coarsely.
Transfer it into a bowl, add chilli flakes and mix well. Keep it aside for further use.

For Frying
In a flat tawa or pan, Heat oil on medium heat for shallow frying.
Wet your hands with water and take a portion of meat mixture and directly place on the pan while shaping them into patties.


Once the kebab are cooked from the bottom side, flip the Kebab and allow it to cook on the other side.
Fry till golden crust is formed on both the sides and evenly cooked.
Remove the kebabs on absorbent paper to remove the excess fat.
In the same pan, add sliced tomato, green chillies, salt to taste and fry for 2 minute.
Remove on a plate and keep aside for further use.
Transfer the prepared kebab into a serving dish, garnish it with tomato, fried green chillies, pomegranate pearls and mint leaves.
Serve hot with mint chutney.
