Here I'm cooking one of my alltime favorites Chicken Parmigiana Light a version of the famous Chicken Parmigiana made with chicken thighs topped with tomato and mozzarella and nestled in a bed of fresh tomato sauce. The thighs tend to stay moister during cooking and the flavors of this version are lighter and brighter than the traditional one perfect for a weeknight dinner. Buon Gusto!
