Ingredients 1012 slices

approx. 650 g chicken breast (boneless)
3 eggs
3 tablespoons of flour
4 tablespoons breadcrumbs
salt and pepper
approx. 500 ml oil for frying

Preparation

1. Cut off the bottom half the thinnest of the chicken breast. Cut the top part, which is thicker, in 2 horizontally.
2. The chicken breast is very tender and should not be pounded with a hammer! To equalize the thickness of the pieces of meat, cover the schnitzels with a food foil and beat them with the bottom of a kettle only on the part where the meat is thicker.
3. Prepare 3 wide plates. One with flour, one in which you put beaten eggs with a pinch of salt and one with breadcrumbs.
4. Pass the pieces of meat first in flour, then in egg beaten with a pinch of salt and finally in breadcrumbs. Do this with all the meat.
5. Heat the oil in a deep pan. Fry the schnitzels as much as they fit loosely in the pan, without overlapping them. Fry on mediumhigh heat for 2 minutes on one side, then flip and fry for another 1 minute on the other side.
6. Remove the schnitzels on paper towels to absorb excess oil. They are served hot or cold.
