Brine ingredients –

2 litres of water
1/3 cup of kosher or cooking salt
Zest off one lemon
juice from two lemons (and the rinds)
3 cloves of garlic (crushed and peeled)
4 tablespoons of brown sugar
10 grams of fresh rosemary
10 grams of fresh thyme


Seasoning ingredients
100 grams of butter (melted)
