INGREDIENTS
Mexican Creamy Sauce
130140g Cashew Butter …or raw cashews, soaked overnight
4 tablespoons vegan plain yogurt
2 tablespoons water
130g salsa of choice
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
2 tablespoons nutritional yeast

Buffalo Chickpea Filling
3 tablespoons vegan butter
4 tablespoons Frank’s hot sauce
A pinch of salt
2 teaspoons brown sugar
2 teaspoons olive oil
1 medium onion
4 cloves garlic
2 can chickpeas, drained
45 Spring Onions (scallions) sliced thinly

8 Tortillas



INSTRUCTIONS
Prepare the Mexican Creamy Sauce.
Add the ingredients to a really good blender. Blend until thick, creamy, and smooth.
Next, make the buffalo sauce.
Melt the vegan butter in a saucepan on the stove. To the melted butter, add the hot sauce and sugar. Stiruntil the hot sauce and butter are mixed well.
Chickpea Prep
Pour the drained and rinsed chickpeas in a medium bowl and roughly mash them with a fork leaving some beans intact.
Heat the 2 teaspoons oil in a pan over medium heat and throw in the chopped onion. Cook for 4 to 5 minutes or until softened then add the garlic and cook for an additional 1 minute.
To the onions, add the buffalobutter sauce and the mashed chickpeas.
Cook for 56 mins.
Add the Spring Onions (scallions) and stir to combine.

Turn off the heat and wipe out the skillet so you can reuse it for making the quesadillas.
Or just use another pan, like I did.
Assemble the quesadillas.
Spread an even layer of the Chickpea mixture Sauce onto one of the eight tortillas.
Spread a little of the creamy sauce over the top. Place another tortilla on top to cover.
Warm your pan. Not too hot. You are looking for a light crisp, not a full fry.

Put something over the top to weigh the tortilla down. A saucepan was good enough for me.
Cook the quesadillas for 3 minutes, then flip and cook another 2 to 3 minutes, or until both sides are crispy and nicely browned. Repeat with the remaining sauce, filling, and tortillas.
