Chocolate Tea Bread

1/2 cup unsweetened cocoa
2 cups allpurpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semisweet chocolate chips, divided
2 large eggs
1 cup whole buttermilk
1/2 cup canola oil

Preheat the oven to 350°. Line a 9“ x 5“ loaf pan with parchment paper; set aside. Set aside 1/4 cup of chocolate chips for sprinkling on top of the bread loaf.

Place remaining 3/4 cup of chocolate chips in a bowl and toss with 1 tablespoon of the flour. Set aside.

Using a large mixing bowl, sift together the cocoa and remaining flour. Whisk in the sugar, brown sugar, baking powder, baking soda, and salt. Stir in eggs, buttermilk, and oil. Fold in the 3/4 cup chocolate chips and flour just until no flour is visible. Do NOT over mix.

Pour batter into your prepared loaf pan and sprinkle the remaining 1/4 cup of chocolate chips on top of the batter.

Bake for 50–60 minutes, or just until the center test done by inserting a toothpick or sharp knife. If it comes out clean, the bread is done. Do NOT over bake! Cool for at least 15 to 20 minutes before cutting the bread.
