Citrus curd
150 g eggs (3 pcs.)
100 g sugar (3.6 oz)
150 g butter (1/3 lb)
50 ml orange juice (1.8 fl.oz)
zest of one orange
50 ml lemon juice (1.8 fl.oz)
zest of one lemon
20 ml lime juice (0.7 fl.oz)
zest of one lime
50 ml grapefruit juice (1.8 oz)
1/2 grapefruit zest

Prepare the citrus curd.
1. Wash and rinse the citrus fruit with boiling water.
2. Peel the zest off the lemon, lime, orange, and grapefruit halves.
3. Squeeze the juice from the citrus fruit.
4. Put the juice on the stove and bring to a boil.
5. Mix the eggs with the sugar, add the freshness, passing it through a sieve.
6. Return the mixture to the saucepan and with constant stirring bring to a boil, simmer for 1 minute.
7. Combine with cold butter and beat with a blender.
8. Pour the kurd into the jars, let cool and close with lids.
9. Put it in the fridge for at least 5 hours.
