In this video I show you two different ways to clean Pompano in order to cook them on the grill. There's a third method where you can leave the head on, but to me that's just for appearances so I didn't include a tutorial for that one.
Method one is filleting the fish in order to have boneless fillets. When cooking Pompano on the grill you want to leave the skin on because it will help to hold the fillets together. If kids are going to be eating the grilled fish, I'd definitely use the boneless method.
Method two is where I show you how to clean the fish whole without leaving the head on. When you cook a fish on the grill using this method you have to pick through the bones. The benefit to cleaning your Pompano this way is there's less meat that gets wasted.
This is actually a catch and clean video for Pompano. In the beginning I show two fish catches at the jetties in SW Florida. The lures I caught them on were a goofy jig and a teaser fly.
