COCA DE SAN JUAN FILLED WITH PASTRY CREAM| SPONGY AND TRADITIONAL WITH ALL THE TRICKS

Hello friends! This week, as San Juan and verbena come, I share how to make a spongy
COCA DE SAN JUAN STUFFED WITH PASTRY CREAM. It is a very traditional recipe from Catalonia, but in few places you will see it as delicious as I prepare it, because I bring you a version FILLED WITH CREAM. Normally some drawings are made in the form of rhombuses on top, because I have tried to imitate the COCA DE SAN JUAN from La Bisbal d'Empordà, where they make it stuffed and it is an experience that has nothing to do with the normal Coca from San Juan, no fill. It's not slow to make, I'll warn you, because for it to be so good and so fluffy it has to have some tricks. Well, here you will be able to learn everything and you will get a coke like from the best pastry shop.
Here are the ingredients with the steps:

1. Prefer:
100 ml of milk
25 gr of fresh yeast
2 tablespoons of the flour
1 tablespoon of the sugar

2. Total mass (includes the part of the preferment)
500 strong flour (before we have put 2 tablespoons)
100 ml of milk (we have already put it before)
100 gr of sugar (before we have already put 1 tablespoon) or preferred sweetener
pinch of salt
lemon zest
cinnamon powder
2 eggs
80 grams of butter
vanilla
45 gr of yeast (before we have already put 25 gr)

3. Pastry cream
4 or 5 egg yolks
cinnamon stick
skin of half a lemon
40 gr of cornstarch
100 gr of sugar or preferred sweetener
500 ml of milk
