RECIPES:
Sourdough Pancakes:
2 cups flour
2 tsp baking powder
1 tsp baking soda
2 T maple syrup
1 tsp salt
1 cup sourdough starter discard
1 1/2 cups buttermilk
2 large eggs
2 T avocado oil
Whisk all the ingredients together. Drizzle pan with avocado oil and pour 1/4 cup batter per pancake into the pan. Cook until the pancakes start to bubble, then flip and cook until the pancake is cooked through.

Flour Tortillas:
7 cups flour
1 cup lard
2 1/2 cups warm water
5 tsp baking powder
1 1/2 tsp salt
Mix ingredients and form into balls. Cover with a towel and let rise 30 mins. Press each ball in heated tortilla press and cook on a cast iron skillet.

Pumpkin Bread Bowls:
500 grams flour
350 grams warm water
50 grams active sourdough starter
1 T avocado oil
2 tsp salt
Mix ingredients until a shaggy dough forms. Cover and let rise 30 mins, then do a round of stretch and folds. Cover with plastic wrap and let rest at room temperature overnight. The next morning, divide the dough into 3 equal pieces and do another round of stretch and folds on each piece. Let the dough rest on countertop for 510 mins before gently cupping your hands around it and pulling toward you to tighten its shape. Place upside down in a floured or oiled bowl (I find that plastic wrap sprayed with cooking spray works best, but whatever you need to do to keep it from sticking). Cover with a towel and let rest 30 mins. In the meantime, place dutch ovens into the oven to heat up at 500 degrees. Place parchment paper over the bowl that the dough is in and invert it to release the dough. Sprinkle the dough with flour and tie cooking twine (firmly against the dough but not pressing into it) to shape the pumpkin. Score and bake with the lid on for 25 mins, then take the lid off and bake another 5 mins. I like to use little pretzel sticks once the bread is cooled to form the pumpkin stem.
