Creamy Leek and Potato Soup
with red rice
for 4 people
Ingredients
Leeks half a kilo
Potatoes 200 g
salt and pepper
Olive oil or butter
Rosemary Laurel
Whole Red Rice 120 gr

Cream of leeks and potatoes for 4 people. Comfort food.
First you need to clean and wash about 600 grams of leeks which will become about 400 clean.
Coarsely chop the leeks.
In a comfortable steel pot, put 30 grams of butter or 2 tablespoons of extra virgin olive oil, add the chopped leeks.
High burner and brown for 5 minutes, stirring often, add 2 large potatoes, peeled and cut into pieces.
Add 2 liters of water and bring to a boil.
Add salt, pepper, rosemary and bay leaf.
put the lid on, lower the heat and cook for one hour.
In a separate saucepan put 4 cups of wholemeal red rice, if you want you can replace it with wholemeal spelled, cover twice the volume of the rice with cold water (do not wash the rice, it is washed only for cooking pilaf and a few other ).
A little salt in the rice, a little oil, bring to the boil and lower the heat, cover, and like the leek, cook for an hour, checking both every 10 minutes. add some liquid if needed.
In the meantime prepare some browned croutons to taste.
After 60 minutes, remove both pans from the stove, remove the lid from the rice, taste everything, and create the soup with an immersion blender.
Serve the soup in a hot bowl, add a spoonful of rice, parsley or chives to taste, and the croutons.
