Ingredients
3 Merrylands chicken drumsticks
1 slice Red Onion
1 Shallot
5 Garlic Cloves
3cm Ginger
3cm Galangal
3cm Fresh Turmeric
5 dried chilli
3 stalks lemongrass
4 TBSP Water
1/2 TBSP Sesame Oil
1/2 TBSP Light Soya Sauce
1/2 tsp Nutmeg Powder
1/2 tsp Aniseed Ground Powder
1 tsp Smoked Paprika Powder
1 tsp Coriander Powder
1/2 TBSP Fennel Powder
1/2 tsp Cumin Powder
1 tsp Curry Powder
4 stalks Curry leaves
Extra V Olive Oil for cooking
Salt for taste
Fresh coriander (optional)
Banana Leaves (optional)

Instructions
1.) Prepare the marinade: In food processor, combine the red onion, shallot, garlic cloves, ginger, galangal, fresh turmeric, dried chili (Wash and soak in hot water for 10 minutes), lemongrass, and water. Blend until you get a smooth paste.
2.) Marinate the Chicken: Transfer the paste into ziplock bag and add sesame oil, light soy sauce, nutmeg powder, aniseed ground powder, smoked paprika powder, coriander powder, fennel powder, cumin powder, curry powder and curry leaves. Place the Merrylands chicken drumsticks in ziplock bag.
3.) Seal the zip lock bag: Seal the bag tightly and massage the marinade into the chicken. Place the bag in the refrigerator and let the chicken marinate for at least 2 hours, or preferably overnight for the flavors to meld.
4.) Preheat the air fryer: Preheat air fryer to 200°C for about 35 minutes.
5.) Air fry the chicken: Remove the marinated chicken drumsticks from the ziplock bag and shake off any excess marinade. Arrange the chicken drumsticks in the air fryer basket in a single layer, making sure they are not overcrowded. Sprinkle some fresh curry leaves and salt. Pour some extra v olive oil on the chicken for a crispy finish.
6.) Cooking time: Air fry the chicken at 200°C for first 15 minutes, flipping halfway through cooking and adjust 180°C and cook another 15 minutes. Flip over again and cook for an additional 5 minutes for char finishing, or until the chicken is golden brown and cooked through. Once cooked, remove the chicken from the air fryer and let it rest for a few minutes.
7.) Serve: Garnish the Malaysian styled air fryer Ayam berempah with fresh coriander, if desired. Serve hot with steamed rice, Acar (in my previous recipe) or your favorite side dishes.

Note: Cooking times may vary depending on the size and thickness of the chicken pieces and the brand of air fryer used. Adjust the cooking time accordingly to ensure the chicken is cooked through and crispy on the outside.
