We show the Cypriot Trachanas from the beginning that we will make yoghurt from the milk of the animals. Our ingredients are A) 5 litres of milk (We used goat milk. You can put mixed or sheep or cow milk), B) 650g sour yoghurt, 100% from sheep milk, C) About 2½ kg of cracked wheat, special for Trachana (in Cyprus we call it "Konari"), D) 3 spoons of salt, about 60 E) One clove of garlic.
