INGREDIENTS
1 butternut squash, small, sliced in half and seeded
2 carrots, large, peeled and roughly chopped
3 vine ripe tomatoes, halved
1 yellow onion, roughly chopped
1 head garlic, top sliced off
½ inch ginger, optional, minced
2 cups vegetable broth, or water
salt and pepper, to taste, generously

My Additions : 15 oz can white beans, ⅓ cup nutritional yeast in soup
My cashew cream sauce:
⅓ cup soaked cashews (12.3G protein)
3tbsp nooch (7.05g protein)
1 tbsp rice wine vinegar
1/2 tsp salt
⅓ cup water
1 tsp white miso

INGREDIENTS
Salad Base
1, 15 oz can chickpeas, drained and rinsed
1 lb delicata squash or acorn squash
1 lb brussels sprouts, thinly sliced
1/2 medium red onion, thinly sliced
3 tbsp avocado oil or neutral high heat oil
1 tbsp cornstarch
1 1/2 tsp garlic powder
1 tsp ground coriander
1 tsp Chinese Five Spice
2 tsp fresh thyme
1/2 tsp fennel seeds
2 tsp maple syrup
Kosher salt to taste
Cooked rice or quinoa for serving

Cilantro Lime Tahini Sauce
1/4 cup tahini
1 tbsp maple syrup or more
1 clove garlic, grated
1 tsp Dijon mustard
1/4 cup cilantro, finely minced
Juice and zest of 1 lime
3–4 tbsp cold water



Roasted Butternut Squash Mac N Cheese

INGREDIENTS
1/2 a medium butternut squash**, seeds removed
1 large shallot, quartered
8 cloves of garlic with their peels
8 sprigs of thyme, optional
1/2 cup raw cashews, unsalted
12 sage leaves
1 cup unsweetened cashew milk
1/2 cup nutritional yeast
1 1/2 tbsp tapioca starch
1/2 tsp smoked paprika
1 tbsp lemon juice
2 tsp white or yellow miso paste
1 tsp dijon mustard
8 oz of pasta (I like to use small shells or macaroni)
Avocado Oil, for roasting
Kosher salt and pepper to taste
Bread Crumb Topping
1/2 cup panko bread crumbs
2 tbsp nutritional yeast
1 1/2 tbsp oil
