2. Preparation
Peeling: The potatoes are peeled to remove their skins. This is often done using steam peeling machines, which use highpressure steam to loosen the skins, followed by mechanical removal.

Inspection: The peeled potatoes are inspected for defects and any remaining skin or eyes are removed manually or by using automated systems.

3. Slicing
Cutting: The potatoes are sliced into thin, uniform slices using rotary slicers. The thickness of the slices can be adjusted depending on the desired type of crisps.

Rinsing: The potato slices are rinsed in cold water to remove excess starch. This prevents the slices from sticking together and helps to achieve a crisp texture.

4. Cooking
Blanching: In some cases, the slices are blanched in hot water to improve color and texture.

Frying: The slices are fried in hot oil, typically at temperatures around 350375°F (175190°C). This step cooks the potatoes and gives them their characteristic crunch. Continuous fryers are often used in industrial settings to ensure consistent cooking.

Oil Drainage: After frying, the slices are drained of excess oil using a combination of shaking conveyors and air blowers.

5. Seasoning
Flavoring: The hot crisps are immediately seasoned with a variety of flavorings, such as salt, cheese powder, or barbecue seasoning. This is done in rotating drums or seasoning tumblers to ensure even coating.

6. Packaging
Cooling: The seasoned crisps are cooled to room temperature to prevent condensation in the packaging.

Packaging: The cooled crisps are then packaged into bags using automated packaging machines. The bags are often filled with nitrogen gas to prevent oxidation and maintain freshness.

7. Quality Control
Inspection: Throughout the process, quality control checks are performed. This includes checking for proper frying, seasoning, and packaging.

Metal Detection: Finished bags are often passed through metal detectors to ensure no metal contaminants are present.

Weighing and Sealing: The bags are weighed to ensure they contain the correct amount of product, then sealed to be airtight.

8. Distribution
Boxing and Shipping: The sealed bags are placed into cartons, which are then palletized and shipped to distributors, retailers, or directly to consumers.
