Recipe for lemon cheesecake without baking, a delicious fresh cheesecake, light, very easy to make.
Ingredients for a 20cm mold:

For the cake:
180 g cookies of your choice
80 g melted butter
For cheesecake cream:
400 g Philadelphia cheese
80 g icing sugar
150 g of whole liquid cream 35% MG minimum
Juice of 2 lemons and its zest
1 sheet of gelatin

For lemon coulis:
100 ml water
100 ml lemon juice
4 tbsp sugar
15 g cornstarch
