My name is Kiki, Im a 37 yr old mom of 2 and wife. I used to be almost 70 pounds heavier than I am today and full of health problems. After trying every diet out there and failing to maintain anything long term, I found my way to a whole food low fat plant based diet, and everything changed. Weight started melting off my body and my health problems like high cholesterol and blood pressure, along with being prediabetic, all quickly disappeared. Now I spend my time helping others see how simple and sustainable a whole food low fat plant based can be.

Recipe:
Ingredients:
● rice paper sheets
● lettuce
● cucumber julienned
● carrot julienned
● mango sliced
● sprouts
● Red cabbage
● Low Fat Thai peanut sauce:
○ 4tbsp powdered peanut butter
○ 1 tbsp low sodium soy sauce (optional, I leave out because it’s too salty)
○ 2 tbsp water
○ 1 tbsp lime juice
○ pinch of ginger, fresh or powdered
○ Maple syrup or stevia to taste (optional)
● Nut Free soy ginger sauce:
○ 2 tbsp low sodium soy sauce or coconut aminos
○ 2 tbsp water
○ 2 tbsp rice vinegar or seasoned rice vinegar
○ 1 tbsp maple syrup (or to taste)
○ Pinch of fresh or ground ginger
○ Pinch of chili flakes (optional)

Instructions:
Prepare the dressing by mixing the low fat peanut dressing ingredients together or make the ginger soy dipping sauce by mixing those ingredients together.
Fill a wide bowl with warm water, place a rice paper sheet in warm water to soften. Once softened, pull out and lay flat on your work surface. Lay down lettuce leaf first then add the rest of the ingredients. Fold right and left sides in first then roll like a burrito. Enjoy with Thai peanut sauce drizzled over the rolls or dip them in the soy ginger sauce.
