Eggplant Parmesan: Original vs Gourmet with Neapolitan Cook Carmela Abbate and Chef Angelo Sabatelli

The new episode of the “Original VS Gourmet" series is all about "her Majesty" the Eggplant Parmigiana. We traveled all the way to Zi Teresa in Naples to discover it with the historic cook Carmela Abbate. The second stop is Putignano, Puglia, inside Angelo Sabatelli's Michelin star restaurant (just wait for the upcoming Sicilian version of Parmigiana!). The classic Neapolitan recipe is opulent and "generous": ragù, provola and fior di latte, are the steps to the ancient popular tradition of Campania. Sabatelli's dish, on the other hand, uses different cooking and glazing techniques to preserve the original flavors, giving life to a gourmand but at the same time very light Aubergine Parmigiana. We couldn't stop eating them... What about you?
