Marry Me Chicken gained popularity online, and its name intrigued me. After seeing its deliciouslooking recipe, I decided to create my own version. I opted for a creamy sauce base but wanted to add more colour, so I incorporated fresh cherry tomatoes and goji berries for both vibrant hues and a touch of sweetness. Coating the chicken in a mixture of flour and smoked paprika not only tenderizes the meat but also enhances its flavour. Deglazing the pan with white wine and sautéing chopped leek makes the sauce quick and easy to prepare. Finally, topping the dish with Pecorino Romano cheese and baking it in the oven, then serving it directly from the pan, adds a romantic touch to the experience. hope you like it.

Marry Me Chicken

Ingredients:

➡For the chicken:
2 chicken breasts, split
1 tbsp plain flour
1 tsp smoked paprika powder
Salt
Black pepper

➡For the sauce:
1/2 leek (about 15g), chopped
3 garlic cloves (about 10g), finely chopped
1 red chili pepper, chopped
1 tbsp goji berries
1/2 tsp chili flakes
1/2 tsp dried oregano
200g cherry tomatoes, halved
100ml white wine
125ml double cream
15g butter
Olive oil
Pecorino Romano cheese
Parsley, finely chopped (for garnish)
Serves 2

Method:

1. Season the chicken breasts with salt and pepper, then coat them in a mixture of plain flour and smoked paprika. Set aside.
2. Heat olive oil in an ovenproof frying pan over medium heat. Fry the chicken until golden on both sides, then transfer to a plate.
3. In the same pan, add the chopped leeks, garlic, and butter. Cook until softened, then add the chopped red chili pepper and cook for 23 minutes.
4. Add the cherry tomatoes and cook until soft. Pour in the white wine and let it reduce by half. Stir in the goji berries, dried oregano, and chili flakes.
5. Pour in the double cream, stir well, and season with salt and pepper to taste.
6. Return the chicken breasts to the pan, coating them in the sauce. Grate Pecorino Romano cheese over the top.
7. Place the pan in a preheated oven (200°C with fan) and bake for about 15 minutes.
8. Sprinkle chopped parsley over the chicken before serving. Enjoy with rice, pasta, or your preferred side dish.
