As we head home from the eclipse in Austin, we visit San Angelo State Park to see Dinosaur tracks, stop at Roswell, NM to visit aliens, and enjoy a beautiful hike to ancient cliff dwellings at another lesser known National Monument

Bran Muffin Recipe

1 cup of raisins (can substitute cranberries or fresh blueberries)
5 oz of All Bran Cereal
1 3/4 cup flour
2 teaspoons baking soda
2 eggs
1/2 cup packed dark brown sugar
3 Tablespoons of dark molasses
1 teaspoon vanilla
6 Tablespoons melted butter
16 oz plain yogurt (if you use greek yoghurt then either reduce flour or add dash of milk/cream)

I like to add:
1/3 cup coconut
1/3 cup chopped pecans

Bake in 400 degree oven for 16 to 18 minutes (interior temp 195 degrees)
Makes 12 muffins
