The next barbecue season will come for sure. My mega hot sauce, with pineapple and chili is fermented. Therefore it tastes especially intensive and hot. For all those who like it hot or who like to use Tabasco, this is the right sauce.
P.S.: Tabasco is a mild sauce, however.

INGREDIENTS USED IN THE VIDEO
8 red ThaiChili
1 pineapple
2 orange bell peppers
2 red onions
700 ml water
50 g raw cane sugar
31,5 g salt
1 tablespoon whey (from yogurt or buttermilk)
Wash and shop up all the vegetables and pineapple.
Put them in a gallon size jar.
Make a brine from water, sugar, salt and whey.
Pour the water over the vegetables. Make sure they are completely covered with water.
Close the jar with a fermenting lid and let ferment for 2 weeks.
After 2 weeks drain the vegetables and blend them with about a quarter of the brine to a fine sauce.
Take care, it's a very spicy sauce.
