Five More Quick and Easy Korean Sides Banchan Part 2

A few months ago, I did Five Quick and Easy Korean Side Dishes. This is Part 2! Five More Quick and Easy Korean Sides Dishes. There are literally hundreds of Korean Side Dishes to chose from. These are five that I grew up with and remain family favorites.

Seasoned Dried Shredded Cuttlefish (OjingeochaeMuchim)
Ingredients:
1 package of dried cuttlefish
Sauce:
2 Scallions, finely chopped
2 garlic cloves, minced
3 tablespoons soy sauce
2 tablespoons Korean red chili paste
2 tablespoons honey
4 teaspoons sesame seeds
2 tablespoons sesame oil

Instructions:
Whisk the ingredients for the sauce until well incorporated. Toss the sauce with the dried cuttlefish until well incorporated. Serve at room temperature or cold.

Seasoned Soybean Sprouts (KongnanulMuchim)

Ingredients:
1# soybean sprouts, cleaned
¼1/2 teaspoon salt
2 garlic cloves, minced
1 scallion, finely chopped
1 teaspoon Korean red pepper flakes
2 teaspoon sesame oil
1 tablespoon soy sauce

Instructions:
Blanch soybean sprouts for about 58 minutes. Drain. Set aside in large mixing bowl.
Add remaining ingredients to soybean sprouts. Toss and mix well. Serve hot or at room temperature.


Stir fried Fishcake (Eomuk Bokkeum)

Ingredients:
4 fishcake sheets, cut into small pieces
½ small onion, thinly sliced
2 to 3 Korean green peppers, thinly sliced
2 tablespoons soy sauce
12 teaspoons sesame oil
1 teaspoon sugar
Pinch of sesame seeds

Instructions:
Heat oil in large pan. Stir fry fishcake for about 1 minute. Add onions and peppers. Stir fry for about 23 minutes. Add seasoning and mix well. Cover and let steam for about 2 minutes. (Add 1 tablespoon of water if it gets a bit dry). Season to taste.
Serve warm or at room temperature.

Sautéed Eggplant (Gaji Namul)

Ingredients:
2 Japanese Eggplants, cut into 2inch quarters
1 garlic, minced
1 scallion, thinly chopped
1 tablespoon sesame oil
1 tablespoon sesame oil
¼ teaspoon sugar

Instructions:
Steam eggplants for about 3 minutes or until tender. Place in large mixing bowl. Slightly cool.
Add the seasonings and gently toss together. Season to taste. The flavors will intensify as it rests.
Serve hot or at room temperature.

Pan Fried Eggplant (Hobak Jeon)

Ingredients:
2 medium zucchinis, sliced
1 cup flour
¼1/2 teaspoon salt
2 eggs, beaten

Dipping Sauces:
3 tablespoons soy sauce
1 teaspoon sesame oil
1 ½ teaspoon rice wine vinegar
Pinch of sugar

Instructions:
Coat each zucchini slice in salted flour and then dip in beaten egg until well covered.
Heat oil in large pan. Place single layer of battered zucchini slices and cook about 1 minute on each side.
Place cooked zucchini on plated lined with paper towel.
Serve hot or at room temperature with dipping sauce.
