This recipe is very difficult to get right and I would very much recommend using flour instead of straight up potato starch to make these noodles. I tried to keep it as close as possible to the original but man, it was a lot of effort for not the best reward.

Recipe:
Potato Udon

1000g steamed Russet Potato, skin on
350g Potato starch
25g All purpose flour
Salt
50ML Water

Broth

1500ML Water
4ea dried Shitake mushrooms
1 piece Konbu, 4 inches
200g grated potato, skin off
Salt/Pepper to taste
30ML light soy sauce
30ML mirin
